Cultivating Pink Oysters, the “Tropical Coral” with CNC Substrates

The Pink Oyster (Pleurotus djamor) is the “sprint-crop” of the mushroom world, prized for its stunning vibrant coral hue and an exotic flavor profile that resembles bacon or seafood when crisped.
Because it is a tropical species, it thrives in warmth and grows with incredible speed.

To achieve the deep, signature pink color and meaty texture, growers must balance high temperatures with aggressive airflow.

Phase 1: Preparation & Opening

Pink Oysters are side-fruiting mushrooms that produce large, shelf-like clusters.
Unlike top-fruiting species, the goal here is to focus the energy of the aggressive mycelium into specific points on the side of the block.

  • Placement
    Place blocks on shelves horizontally or vertically.
  • The “X-Cut” Method
    Do not open the top of the bag.
    Instead, fold the excess plastic at the top down tightly against the block and tape it in place to remove air pockets.
    Cut 2 to 4 small “X” slits (approx. 3-5 cm) on the vertical sides of the bag.

Why? This concentrates the biological pressure at the slits, forcing the mushroom to form dense, heavy clusters rather than many small, spindly ones.
Removing air pockets between the plastic and the substrate prevents “pinning under the plastic.”

Phase 2: Induction & Pinning

Pink Oysters require warmth and high humidity to “wake up” their tropical genetics.

  • Tropical Climate
    Maintain a warm fruiting room. Pink Oysters perform best between 20°C and 30°C.
    If the room is too cold (below 15°C), growth will stall and the color may turn muddy.
  • Humidity
    Maintain RH at 90–95% during the first 48 hours after cutting.
    You will see tiny pink “pins” emerging from the slits within 2–4 days.
  • Visual Check
    Healthy pins should look like a cluster of bright, saturated pink coral.
    If the pins look pale or white, increase the light intensity immediately.

Phase 3: Development (The “Oxygen” Phase)

The Pink Oyster is an “Oxygen Glutton.” It has one of the highest metabolic rates of any cultivated mushroom.

  • CO2 Management
    This is the most critical factor. Maintain CO2 levels below 800 ppm.
    If CO2 is too high, the mushrooms will develop long, ropey stems and tiny, useless caps.
  • Airflow
    High evaporation is key.
    You need a constant, gentle exchange of fresh air to strip away the CO2 produced by the block.
  • Light for Color
    Pink Oysters require light to synthesize their pigment.
    Provide 1000–1500 lux of “cool white” light for 12 hours a day.
    Without sufficient light, the “Tropical Coral” will fade to a pale white.
  • Air Temperature
    20-25°C

Phase 4: Harvest

Because of their rapid growth, the window for a perfect Pink Oyster harvest is very short—often only a few hours.

  • When to Harvest
    Harvest when the edges of the caps are still slightly curled downward or have just flattened out.
    If the edges begin to curl upward and release white spores, the mushroom will lose its color and shelf life rapidly.
  • Technique
    Grip the entire cluster at the base and pull firmly, or use a sharp knife to cut the base flush with the plastic.
  • Handling & Storage
    Pink Oysters are more fragile and have a higher water content than Shiitake.
    Handle clusters with care to avoid bruising.
    Place them in the cold chain (2–4°C) immediately.

Shelf Life Note: Due to their tropical nature, Pink Oysters are best sold shortly after harvest.
