Premium Substrate Blocks for Commercial King Oyster (Eryngii) Cultivation

The cultivation of King Oyster (Pleurotus eryngii) requires a substrate with high nutritional density and precise physical structure to produce the thick, meaty stems and small caps prized by the culinary market.

Unlike standard Oyster varieties that can grow on simple straw, Eryngii is a “weak” decomposer that demands a sterilized, wood-based medium.
CNC Substrates provides professional-grade Eryngii blocks optimized for high stem-to-cap ratios and exceptional shelf life.

Substrate Formulation

King Oysters are heavy feeders.
Our formulation focuses on a high nitrogen-to-carbon ratio to ensure the dense, succulent texture that chefs demand.

The Substrate Base

Hardwood Sawdust (Beech Base)

The foundation of our Eryngii substrate consists of a 70% beech hardwood base, chosen for its stable lignin profile and energy density.

We utilize a specific particle size to optimize air porosity and gas exchange within the block, preventing anaerobic zones.

This structural calibration ensures a consistent supply of oxygen to the mycelium, supporting the vigorous vertical development and density characteristic of high-quality King Oyster mushrooms.

The Supplements

Nutrient Boost

Our Eryngii formulation includes a nutrient boost from organic supplements, a higher concentration than standard wood-loving species.

This enrichment is calibrated to support the rapid protein synthesis and expansion of the large, dense fruiting bodies characteristic of the King Oyster.

By optimizing the nitrogen availability, we ensure the mycelium has the metabolic energy required for high biological efficiency and consistent fruit body quality.

The Sterilization Standard

Bulk Sterilization & Precision Hydration

High supplementation levels necessitate a rigorous sterilization standard to prevent crop loss.

Our proprietary Bulk Steam Technology (121°C) eliminates competitive molds like Trichoderma while preserving the essential structural integrity of the wood fibers.

This process is paired with a precise hydration profile of 62%–65% using filtered water, specifically balanced to prevent “bottom rot” in dense, heavy-stemmed clusters. This dual-control approach ensures a clean, stable environment that supports the high biological demands of the Eryngii mycelium.

Process

Utilizing an energy-efficient atmospheric steam system, we treat the substrate at 95°C. This creates a biological “blank slate,” allowing our aggressive Eryngii strains to claim the nutrient-rich medium instantly, leading to faster pin-set and more uniform harvests.

Product Formats

  • Ready-to-Fruit (Fully Colonized)
Blocks that have reached full physiological maturity.
These blocks are white with mycelium and ready for the “cold shock”
and CO2 adjustments required to trigger pinning.

Strain Library

We use common commercial standard strains in Europe.

  • Commercial Standard
Focused on a massive, thick stem with a dark, marbled cap.
Excellent storage life and resistance to bruising.
  • Custom Inoculation
Available for large-scale commercial contracts (>10.000 blocks).

Yield Expectations

King Oyster is typically managed as a “one-and-done” crop or a 1.5-flush crop to maintain the highest commercial quality.

  • Biological Efficiency (BE)
    50% – 70%
  • Yield Data
    For a wood-based sterilised 2.5 kg block (approx. 0.850 g – 0.950 g dry matter), growers can expect a total yield of 0.5 kg – 0.6 kg of premium-grade mushrooms.

Quality Note
Our blocks are designed to produce uniform clusters, reducing the labour costs associated with trimming and grading.

Disclaimer
Yield expectations for CNC substrate blocks are indicative only. Actual results may vary depending on the strain, growing conditions, facility design, hygiene, handling, and cultivation management. CNC Substrates cannot guarantee a specific yield, biological efficiency, or number of flushes, as these factors are outside our direct control after delivery.
